Exotic Vacation In A Cup

Hi Friends,

I have craving Indian flavors very frequently lately.  Perhaps it is because the spices that Indian food uses are naturally warming for the body.  Or perhaps it is because I would really like to go an exotic vacation.  Either way, I came up with an ice cream combo I am pretty excited to share with you based on some Indian flavors.

Curry Mango Coconut Milk Ice Cream

- 14 oz can coconut milk

- 1 cup So Delicious Unsweetened Coconut Milk

- 2 TB arrowroot powder

- 1/3 cup brown sugar

- 1/2 TB tamarind paste

- 1 TB chopped fresh ginger

- 1 1/2 tsp curry powder

- 1 cup frozen mango chunks

- Combine the arrowroot powder and 1/4 cup So Delicious coconut milk and set aside.  In a large pot, combine the can of coconut milk, remaining So Delicious, brown sugar, tamarind, ginger and curry powder.  Heat over medium high while stirring until small bubbles form around the edges of the pot. 

- Stir in mango and continue to cook until the mango gets softened.  Remove from heat.  Using an immersion blender, blend mixture until large chunks of mango are broken up. 

- Stir in reserved coconut milk and arrowroot.  Place mixture in refrigerator until completely cool. 

- Once cool, mix according to ice cream maker directions. 

I am very pleased with how this recipe turned out.  The flavors combine nicely with each other.  Sweet mango and spicy curry powder.  Tangy tamarind with the bite from the ginger.  YUM!  The texture held up nicely too after a day of freezing.  An all around ice cream making win and I have become that much more antsy for warmer weather.  (Just looked out my window and it is snowing again.  boo!)

I  must apologize.  I forgot about my plans of photographing my meals this weekend until I went to bed last night.  I shall have to save this for another time because I do eat quite differently on the weekends.

  1. I have never used arrow root powder before….do you add it for thickening purposes?

    And what do you use your left over tamarind paste for?

    A sliced mango with lime is super divine. :)

  8. Ahh yes, Indian Food. what’s your favorite Indian Restaurant/ dish? I love the India Palace in Roseville. I have yet to find a better Indian dining establishment!! It’s my fave.

  9. Oooh man this looks good. I was just thinking this morning that I needed to find a good, dairy-free ice cream recipe. When you get the chance, could you let me know if this one ices up after it sits in the freezer for a little while?

    • this one has done better than some of the other ones. the arrowroot helps a lot. i’ve notice that white sugar and higher fat content in the bases also helps. i’ve heard about the vodka trick but haven’t tried it. let me know if you do! the recipe for the vegan elvis ice cream was the creamiest and kept the longest.

  10. Hi Kiki! If you don’t want your ice cream to “ice up” try adding a tablespoon or two of vodka. The alcohol will keep it from getting too hard or icy, but you won’t taste it.

    How was the texture?? Soft serve or ice cream-like? Did you even have any leftovers to see how it froze? lol I love making my own ice creams but don’t have good luck getting them to be anything but an ice brick after a day in the freezer.
