Sorry for the absence yesterday. I dedicated the evening to packing and putting together bags to take to Goodwill. I so hate the physical act of moving and packing but at least it forces you to get of unnecessary stuff, right? Plus I am pretty pumped to be living with my new roomie
I was in the mood to be a little creative in the kitchen this afternoon. After browsing The Vegan Scoop at a Barnes and Noble conveniently located next to Goodwill, I came up with the idea for a new ice cream combination!
Vegan Elvis Ice Cream
- 1 3/4 cup vanilla soy creamer
- 1 1/4 cup unsweetened soy milk
- 1/2 cup sugar
- 1/2 cup chunky peanut butter
- 1 large banana mashed
- 1/2 cup chocolate chips
- Heat soy creamer, soy milk, sugar and peanut butter over medium heat until sugar is dissolved. Remove from heat and stir in mashed banana. Place in refrigerator until mixture is cool. Mix according to ice cream maker directions. Add chocolate chips with 5 min of mixing time left.
I was planning a post for today about a Clean Food recipe that I intended to make. After making the ice cream I was super sweaty and had spent up all my cooking mojo. I wasn’t going to blog about the ice cream until tomorrow as I have discovered that the real test to ice cream is the second day. The taste and texture is always good after you get done making ice cream. It is very soft serve-esque. However, I am not yet able to predict how things will stay overnight. Sometimes I get delicious, scoopable ice cream. Other times it is a hard crumbly mess.
With that said, as of now this ice cream is freaking awesome fresh out of the maker!!!!! Peanut butter, banana and chocolate is always a fabulous combination. Between the soy creamer and peanut butter, there is enough fat to make for a really creamy texture. The peanuts and chocolate chips leave a little something to chew on. I have high hopes for it keeping well in the freezer. You will just have to check back tomorrow and find out and feast your eyes on its beauty. That is if I don’t eat it all

YUM YUM YUM! omg we have a little restaruant here that has something similar as well as the famous peanut butter banana sandwich! this would taste soo good! oh good lord, the chocolate chips in there too!!! YUM YUM YUM YUM x 10000 lol
