Hi Friends,
Last night I went over to my friend Anne’s new house for a dinner party with some of my friends from college. This was the first time I told these ladies about the blog and was a bit nervous to photograph food in front of them. I don’t know why. They are all cool women and nobody seemed to care or think it all strange.

As you can tell by the smiles on their faces, it was really nice to see these ladies and catch up. At one point or another, we have all lived with each other and used to know what kind of breakfast cereal the other ate or when they prefered to shower. It is a nice treat to hear about what everyone is up to and catch up on gossip.
Anne prepared a lovely spread for the evening.
There was a some green and yellow beans and a green salad that I did not photograph. The pasta was really tasty! I think of saffron as a super fancy pants ingredient so I am automatically impressed by those who cook with it. The pasta was very bright and all the elements worked together nicely. I felt full and satisfied at the end of the meal but not stuffed.
For dessert I brought over a batch of coconut milk ice cream. Kelly asked me what flavor it was. Since I didn’t have a really good answer for her, she decided that it should be called Joy. So with that, I give you the recipe for Joy
Joy
- 15oz Coconut Milk
- 15oz Light Coconut Milk
- 2/3 cup Sugar
- 1/2 cup Sweetened Flaked Coconut
- 1 1/3 cup Katified Blackie crumbs (you can use whatever kind of brownie you like!)
- Combine both Coconut Milks and sugar in a saucepan. Heat over medium until the sugar is dissolved and the milk starts to bubble around the edges.
- Remove from heat and chill for at least an hour.
- Mix according to ice cream maker directions. With five mins of mixing time left, add in the Coconut Flakes and Brownie crumbs. Continue to mix and freeze until ready to serve.
I was very satisfied with how this recipe turned out. I skipped the step with the arrowroot that I have done with previous ice cream making and did not notice a difference. The brownie chunks broke up a bit more than I was hoping for. Any ideas on how to prevent this from happening?
Plans for the day include a little exercise, an afternoon of boating if the weather cooperates, and a Lynx game with Art. I am also planning on stopping by a camera store to price out a new toy. We have a really nice camera at the day camp I got to use this week. It left me antsy for an upgrade. What are you up to this weekend?

When are you adding the brownies to the ice cream maker? If you’re not already, I’d hold off until the last 3-5 minutes.

Ohh your eats look yum! And yeah, you’ll find that friends quickly adapt to all the picture taking. Some bloggers refuse to do it in restaurants and other public places, but I snap away shamelessly!
Ok I need to look over your icecream recipes because all of mine have been DUDS! I tried coconut creamer but apparently that wasn’t doing it so I’ll have to look out for full-fat coconut milk (why doesn’t TJs sell it?!)

that is weird that TJ’s doesn’t have the full fat coconut milk. i have found fat and white sugar to be the two keys to “creamy” ice cream. when i try using alternative sweetners are all reduced fat stuff, it is not good ;( let me know if you try a recipe!
i love the sound of that citrus saffron pasta! i still have a bunch of saffron threads i need to start using….

I think some investigation needs to be done into growing saffron given how tasty Anne’s pasta dish was. As your former partner in crime/dubious million dollar schemes, I foresee a profit in this endeavor.

I was nervous the first time I told my friends about why I needed to photograph food, but it all turned out okay…better, actually, because they went out of their way to make their food look more presentable!
